The Mencía plots are located in Espanillo at 700 meters altitude, the average age of the vineyard is 80 years.
The soil is decomposed slate with sandy areas, plowed in 3 passes in spring.
After a manual harvest in boxes, the grapes are selected, partly destemmed and crushed. Then it goes directly into foudre of 5000L where it makes the alcoholic and bad lactic fermentation , it will remain in this foudre until its racking to be bottled . The aging time is 11 months for the 2018 vintage. Bottling without filtration is done with a slight clarification.
